Ingredients

Directions

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Peel the apples, removing the cores, and cut into 10-12 pieces.
  3. In a saucepan, place the apple pieces and the fresh blackberries, and just enough boiling water to cover the bottom of the saucepan. Add in 1/2 tsp cinnamon and simmer for ten minutes.
  4. In another small saucepan, place the coconut oil, maple syrup and 2 tsp cinnamon over gentle heat, until the coconut oil is melted.
  5. While the coconut oil mixture is melting, place the almonds into a food processor, blending until it produces an almond flour. Place this almond flour into a bowl and add in the oats.
  6. Once melted, add the coconut oil mixture into the oats and almond flour, stirring until all dry ingredients are covered.
  7. Place the soft fruit into the bottom of a baking dish, layering the oat mixture on top. Bake for 25-30 minutes, or until the topping is nicely browned.
  8. Serve with vanilla ice cream, or by itself, and enjoy.
