Preheat broiler. Combine yogurt, mustard and parsley in a small bowl, mix well. Spread one fourth of yogurt mixture over each of four muffin halves. Top evenly with Canadian bacon, tomato and cheese. Place on broiler pan with remaining muffin halves. Broil for 1 minute or until muffins are toasted and cheese begins to melt. Place eggs on cheese-topped muffin laves and sprinkle with paprika if desired. Serve with remaining muffin halves.
