  1. Melt butter in large stock pot. Add onion, jalapeno (if desired), celery and carrots. Stir and cook for about 10 minutes until vegetables are tender. Stir in flour and cook until flour is lightly browned.
  2. Add chicken broth, deglazing pan as you stir. Stir in milk and potatoes, continue to cook over medium heat about 15 minutes; stirring often.
  3. Add ham, corn and seasonings. Simmer over low heat until potatoes are tender (about 10 minutes).
