  1. Combine cream cheese, lemon juice and 1/4 cup sugar in a bowl and use a mixer until ingredients are creamy. Set aside.
  2. Place a saucepan on low heat and combine 4 cups raspberries and 1/3 cup sugar. In a small separate bowl or measuring cup, mix water and cornstarch. 
  3. Add the cornstarch mixture into the saucepan, stirring in between. 
  4. Continue to simmer until it thickens slightly and remove from heat and allow to cool for about 15-20 minutes. 
  5. Place granola or crushed graham crackers at the bottom of your glass. Layer on some of the cheesecake filling. Place a layer of the raspberry sauce on top of the first layer of cheesecake, before topping with a second layer of cheesecake filling and fresh raspberries.
