PREPARE couscous mix according to package directions, using chicken broth, 1 tablespoon olive oil and salt. Place in large bowl; fluff with fork.

WHISK fruit spread, 1/4 cup olive oil and vinegar until blended. Pour over couscous. Stir until evenly blended. Cool at least 15 minutes. Fold in strawberries and mint just before serving. Sprinkle with cheese.
