1. Preheat oven to 375 degrees. Coat a 10-inch oven proof skillet with melted butter. Arrange cherries in single layer in buttered skillet and set aside.
2. In medium bowl, combine eggs, milk, sugar, zest, extracts and salt and whisk until smooth. Add flour and whisk just until combined. Pour over cherries in prepared skillet. Bake until set, puffed and light golden brown around the edges, about 30 minutes.
3. Place pan on wire rack and let cool for 10 minutes. The clafoutis will deflate. Cut into wedges, serve warm for breakfast or dessert.
